Josh is the chef behind RareFlavours, a private chef service based in Rugby, Warwickshire. He cooks seasonal tasting menus in people's homes across the East Midlands, for dinner parties, birthdays, anniversaries and business dinners.

He plans every menu himself, sketches each plate before service and cooks every course on the night. On the evening he is calm, friendly and happy to talk about what is on the plate, or to stay out of the way and let the night flow.

How Josh cooks

Produce with a name

Lake District farm chicken, Herdwick lamb, rare breed pork. Ingredients chosen for where they come from, and cooked to show them off.

ii.

Technique you can taste

Terrines set ahead, sauces built slowly, crackling blistered at the last moment. The work happens so the plate looks effortless.

iii.

Hospitality, not just food

A private dinner is about the people at the table. Josh reads the room, paces the courses and leaves the kitchen spotless.

From sketch to plate

Before every evening Josh prints the menu, marks up each course and sketches the plates in pen: where the purée goes, how the lamb sits, which garnish finishes it. On the night, that page sits beside him on the pass.
